Ingredients
  

  • 1 sheet Puff Pastry
  • 1 large Egg
  • 2 tablespoons Olive Oil
  • 1 medium Shallot
  • 2 cloves Garlic
  • 6 ounces Fresh Spinach
  • 4 ounces Cream Cheese
  • 1/2 cup Heavy Cream
  • 1/2 cup Grated Parmesan
  • 1/4 teaspoon Nutmeg
  • 4 large Eggs
  • Salt and Pepper
  • 2 tablespoons Chopped Fresh Chives

  1. Thaw puff pastry and preheat oven.
  2. Roll out pastry and cut circles.
  3. Blind bake pastry shells.
  4. Sauté shallot and garlic.
  5. Add spinach and cook.
  6. Mix cream cheese, cream, Parmesan, and nutmeg.
  7. Fill pastry shells with spinach mixture.
  8. Create wells and crack eggs into each.
  9. Brush pastry edges with egg wash.
  10. Bake until whites are set and yolks are runny.
  11. Garnish and serve.

Notes

Customize with different vegetables or cheese as desired. Store in airtight containers for up to 3 days.
